THE ART OF BLENDING
Blending olive oil is considered a challenging task which requires a large number of technical and scientific skills, as well as the ability to conceive and create the personality of an olive oil.
Organoleptic Characteristics
Organic Chemlali
At the sensory level, the Chemlali olives give at the beginning of maturity a very fruity, bitter and spicy oil with mainly green almond, fresh grass and rarely apple aromas. At full maturity, the oil of the Chemlali becomes sweet with low fruity taste. The aroma of green almond is replaced by that of dry almond or almond paste.
Organic Chetoui
At the sensory level, the olives of Chétoui give a fruity oil with intense aromas of green almond accompanied by a bitter and pungent taste perceived with medium to strong intensity. The intensity of the bitterness decreases during the ripening of the olives, but is still erectable.
